1998-2004 Domaine Jean Grivot
Before Mathilde, the new generation, took over in 2017, Domaine Jean Grivot was led by Étienne Grivot and his charming wife Marielle (who is the sister of Savigny’s Patrick Bize). They have been operating one of Burgundy’s most premier wineries since 1987, with a commitment to preserving the quality and vitality of the soil through natural vineyard practices, including the use of the Plocher energy system.
The grapes are carefully hand-picked and completely destemmed before undergoing a cold soak to bring out their full flavor. The fermentation process is carefully controlled at temperatures ranging from 26-33°C, and the wine is aged in oak barrels, with 20-50% of them being new, until it reaches its peak for the first and only racking. The Grivots have a simple yet noble goal: to turn the succulent fruit of their vineyard into a wine that truly embodies the essence of nature.
